Crumbed Chicken Bites

This has to be one of our favourite recipes. Summer picnics, after school snacks or entertaining – these little crumbed chicken bites are a winner. We cut each burger into 4 pieces, but you can make them any size you like. Our Italian Herb Chicken Style Burgers are packed full of flavour, so the hard work is done for you. Simply crumb and cook, then you’re ready to go!

What You’ll Need:
Plant Nation Italian Herb Chicken Style Burgers
Gluten Free Bread Crumb
Gluten Free Flour
Eggs, Whisked or Egg Replacer
1 Tbs Mixed Herbs (optional)
Oil
Sauces to serve

What You Need To Do:
Line up 3 bowls next to each other. Put flour in the 1st bowl, egg or egg replacer in the 2nd and bread crumb in the 3rd. Add mixed herbs to the bread crumbs (optional). Now cut each burger into quarters, roll each piece into a ball and then lightly squish between your palms to create a ‘flat circle’. Once all the pieces are rolled, add them into bowl 1, making sure they are all evenly coated in flour. In small batches, dip them into the egg mix and then place them into bowl 3. Using a fork, turn the pieces around in the bread crumb and lightly pat with your hands to ensure a nice even coating. If needed, repeat bowl 2 and 3.
Add enough oil in a pan to shallow fry the pieces, generally 1-2cm deep, and place over medium heat. Carefully fill the pan with chicken bites once the oil is heated. Cook for 2-3 minutes on each side or until golden and cooked through. Serve with your favourite dipping sauces.

Note: To test the temperature of your oil, drop a few breadcrumbs in, if they bubble and float to the top, the oil is right.
