These tasty tacos are the perfect healthy and nutritious plant-based alternative for your weekly fix of Mexican. It’s also a great option if you’re entertaining friends or family for dinner, simply put all your toppings into bowls and place them in the middle of the table, then everyone gets to create their own deliciousness. It’s completely gluten free and vegan friendly, so jump onboard taco Tuesdays with us, there’s no reason not too!
What You’ll Need:
Plant Nation Parsley & Thyme Beef Style Burgers
G-Fresh Taco Seasoning
Avocado, chopped or smashed
Red onion, finely diced
Coriander, lightly chopped
Fresh Lime, cut into wedges
What You Need To Do:
Prepare the fresh ingredients from the list above (whether its chopped, diced or smashed) and set aside until you’re ready to assemble. Crumble the Plant Nation Parsley & Thyme Beef Style Burgers into a non-stick pan, on medium heat, and mix with a spatula until it is broken up into a mince. Add 2 tablespoons of olive oil and sprinkle in a tablespoon of taco seasoning. Continue to mix until fully combined and cooked through. Simultaneously, heat the black beans according to instructions on the can (microwave or stove top).
Now for the fun part – layer all the ingredients into the taco shell then finish with a sprinkle of coriander, a squeeze of fresh lime juice on top and you’re all ready to enjoy.
